Ideally, you would make this with fresh Roma tomatoes as well, but the best tomatoes are grown on the vine and harvested shortly before eating and depending on the time of year and where you live, the 'fresh' tomatoes in your grocery store have probably been picked early and ripened on a truck before they were set on display for you to buy. When truly fresh tomatoes are not in season, canned tomatoes are the better option as they are picked and processed at a peak point of freshness, which makes them tastier than the 'fresh' produce available in the stores.

Basic Tomato Sauce
- 2 28 fl oz cans diced or whole tomatoes
- 3 cloves garlic - crushed
- ¼ cup chopped basil leaves
- salt and pepper
- Heat a large pot to medium high heat. Add the tomatoes and garlic and season with salt and pepper.
- Bring the pot to a boil, then reduce heat to simmer for 15 minutes.
- Add the fresh basil and simmer for 5 more minutes.
